What's Cooking - September 5th Edition

The heat of the summer has me beat. As I sat down to plan out our menu plan for the next week, I couldn't help but wish for cooler temperatures. While I do enjoy (and have even come to love) living in North Texas, this summer has been crazy hot. (I think it's been that way everywhere though!)

Saturday, after I picked up our produce basket from the co-op, I wrote out our menu plan (2 weeks even!) and dreamed about the food I'd love to enjoy if it wasn't so broiling hot outside.  While I didn't put my cooler weather ideas onto our menu, I did make sure to stock up on the pantry ingredients so that I'm ready to go when that coolness FINALLY comes to town.

And, believe it or not, it arrived today.

HOOOORAY! The windows are open, the ceiling fans are on, and the air conditioner is off. I couldn't be more pleased!!

I mentioned briefly that I planned our menu for two weeks. I will be out of town for close to a week of those two weeks (BlogHer Handmade/The Creative Connection Event). It's important to me to plan ahead so that that there is plenty of food (and a plan) for my husband to enjoy while I'm gone.
 
Below is a photograph of what we received in this week's Bountiful Basket (our produce basket). There is a LOT of food! Check out those potatoes, and the grapes were small (the kind that are used for raisins!).

This week, I opted to get the "Mexican Pack" which added the bounty below!

With that in mind, here's what I'm planning to serve my family for the next few weeks:



Monday: Hamburgers, Potato Salad, Frog Eye Salad, Green Salad
Tuesday: Green salad with grilled steak 
Wednesday: Baked pork chops, oven roasted potatoes & cauliflower
Thursday: Pasta tossed with spinach, tomatoes, pine nuts and parmesan cheese
Friday:  Grilled Pizza with fresh basil, tomatoes and mozzerella
Saturday: Leftovers
Sunday: Crockpot roasted chicken with vegetables
Monday: Bean and grilled veggie burritos with tomatillo salsa and guacamole
Tuesday: Thai chicken curry fried rice
Wednesday: Leftovers
Thursday: Sourdough, irish cheddar and spinach panini's with basil pesto
Friday: Order out (whatever he'd like really)
Saturday: Chicken & Rice Casserole
Sunday: Leftovers

With all that planned out, and several of my favorite "cooler" weather meals already stocked up, I think we're in good shape for a while.

Bounty is exactly the word that came to me also. Enjoy your trip. I wish I would be there with you. We always have Paper Crown...
