Cooking: Orange Creamsicle Cake

Each week, my family gets together (or tries to!) and we have an activity. In my family, no activity is the same without a treat of some sort. Granted, the treat can be as simple as a few Skittles, or something equally easy. However, me being the person I am, normally bake something.
This week, I wanted to make something sweet, simple and refreshing. Orange Creamsicle Cake. 
I had heard of it from several friends, but had never had it for myself. And, of course, no one I knew had the recipe. So, I did a bit of searching online, and put together a recipe by combining a few of what I found, and then added a few things that I thought would make it "mine". Here is my version - SUPER simple, completely pantry available, and really refreshing. (Yes, I used a boxed cake mix. I'm okay with that!!)

INGREDIENTS:
  • 18 ounce yellow cake mix
  • 3 eggs (or as called for by your cake mix)
  • 1/3 cup oil (or as called for by your cake mix)
  • 1 (4 ounce) package orange flavored gelatin (like Jell-o)
  • 1 (4 ounce) package instant vanilla pudding
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 teaspoons orange flavoring
  • 1 (8 ounce) container whipped topping (like Cool Whip)

DIRECTIONS:

Mix cake and bake as directed, adding 1 teaspoon of orange flavoring to the batter.

Make orange gelatin, using 1 cup of water (1/2 of what is called for).

Poke holes in the hot cake, with the handle of a wooden spoon.

Pour gelatin over cake and cool.

Mix pudding mix with milk, vanilla, and remaining orange flavoring. Mix the pudding mixture with the whipped topping and spread on your cooled cake.

Refrigerate until ready to serve.
