It's also possible to shred boneless chicken that has been cooked in the microwave. When I need a quick meal, I just throw frozen chicken breasts on a plate and microwave them on high for 10-15 minutes, then add seasonings (taco, garlic, etc.) while they are shredding in the mixer.
