Banana-Oatmeal Chocolate Chip Drops

These tasty treats are a great way to use up those bananas that you haven't gotten around to using. The dough freezes well - I freeze it in logs in saran wrap, and then wrapped in tin foil. When I need cookies in a jiffy, all I need to do is slice up a log and bake! They're one of Steve's favorite cookies!

2/23/2011 Update: After making these for many years as written below, I tried using whole wheat flour with them instead of all-purpose flour. No one noticed the difference! Hooray! And, for what it's worth, I have decided that I like the texture I get when I freeze the dough first (in logs so it's ready for slicing and baking when I am).

Ingredients:

1 3/4 C. Oats
1 1/2 C. All-purpose flour
1 C. Sugar
1 C. Mashed Bananas (2-3 medium bananas)
3/4 C. Shortening
1 Egg
1 t. Salt
1 t. Ground cinnamon
1/2 t. Baking Soda
1/4 t. Ground nutmeg
1/2 C. Chocolate Chips
1/2 c. Chopped nuts (optional)

Instructions:

Heat oven to 400 degrees. Mix all ingredients. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until light brown, about 11-13 minutes.

Yields about 4 dozen.
